I have been waiting since last spring to make this delicious meal and I was so glad to find sufficient snow peas in the garden to make it. It is so easy and doesn’t take much time at all. We’ll be eating more snow peas later in the week as they are growing so incredibly well at the moment. I only used broccoli, snow peas, mint and coriander from the garden, but as time goes by, I’ll be able to make this enitre dish using the required veges from my garden (with the exception of avocado which I don’t grow). Inset picture illustrates my first snow pea harvest.
If you don’t grow snow peas, I definitely suggest you do. They are so easy to grow and so incredibly delicious!

PORK & NOODLE STIR FRY
- 500g pork
- 1 packet udon noodles
- 1 courgette, sliced
- 1/2 red onion, sliced
- 100g snow peas
- 1/2 red capsicum, sliced
- 100g broccoli
- 2 tbsp coriander, chopped
- 2 tbsp mint, chopped
- 1 lime
- 1 tbsp peanut oil
- 1 tsp chopped red chili
- 2 tbsp fish sauce
- 1 tbsp castor sugar
- drizzle of sesame oil
- 1 avocado, sliced
- Thinly slice pork and fry in peanut oil.
- Place noodles and snow peas in bowl of boiling water for 5 minutes or until snow peas turn bright green.
- Add courgette and broccoli to pork and sitr fry for a couple of minutes.
- Add all the other ingredients including the drained noodles and snow peas and toss with a drizzle of sesame oil.
