CHEERS TO GARDENING (WITH A NICE COCKTAIL) - 20 October 2012

 
Phew!  It’s been a long hot day outside digging up grass for my new Tuscan garden and planting out the eggplants and sweetcorn.  The weather was great but the wind has really worn me out, so it’s time to put our feet up and enjoy these delicious Moscow Mules I made using some lovely fresh mint from the garden…they are a really refreshing cocktail and don’t take much preparation at all.  We drink these in the summer and serve them to guests when they arrive for dinner parties/BBQ’s etc:
  • put a splash of decent vodka (preferrably Swedish) in a tall glass
  • make a fist, put a decent handful of mint in the other hand and pound the mint using the side of your hand a couple of times to release the smell and flavour of the mint
  • put in plenty of ice
  • top up with a good quality ginger beer (our is home-made ginger beer by my husband)
  • place a slice of lime in the glass (I’ve used a slice of lemon from the garden as a substitute)
  • ENJOY!
