So excited – have just harvested my first squash and courgette of the season. I’m going to cook these with a little knob of butter and serve them with a salmon frittata using potatoes, spinach and parsley from our garden.
Mmm…best I get cooking! It is going to be a delicious meal! There are vast quantities of squash growing on one of the plants in my polytunnel, so I’m sure there will be lots more to eat very soon….I might even put a light batter (like tempura) on some of the flowers later on the week and create a nice little Italian entrée. Oh I just love homegrown vegies!
